Meet the Dietitian
Our Dietitian, Kara Miller is available for complimentary consultations on topics such as:
- Food allergies, celiac disease, diabetes, or other special dietary needs
- Eating healthy on campus
- Vegan and vegetarian nutrition
- Weight management
Your Dietician's background includes experience in school foodservice management and federal nutrition program oversight. The dining team works to create healthy food options across campus and is available to assist students in making sustainable changes to their diet that fit their lifestyle.
Students with special dietary needs are expected to communicate their dietary restrictions and requirements to the Dining Team. Food prepared and served in the Simple Servings station is free of the top seven food allergens (wheat, eggs, milk, peanuts, tree nuts, shellfish, and soy) as well as gluten. The Simple Servings station is located in Harrington Place Dining and is open during lunch (11:00 a.m. - 2:30 p.m.) and dinner (4:30 p.m. - 8:00 p.m. weekdays 4:30 p.m. - 7:00 p.m. on weekends) every day.
Vegetarian & Vegan
One of the most popular stations in Harrington Place is our Vegetarian Station which has vegan entrée’s, soups, composed salads, and more for lunch and dinner. At each station, entrées are clearly marked with designated signage for Vegan and Vegetarian options. We strive to offer a variety of soup options, and salad bar condiments that create healthful and balanced meals.
We recognize that no two customers choose the same. Some of our customers have specific medical related needs, religious and/or cultural dietary requirements. This is why Belmont Dining seriously considers our offerings and provides specialized services in addition to our wide variety of foods that cater to our customers’ dietary needs and preferences.
Mindful is Sodexo's health & wellness approach that helps you make healthy choices second nature! We are committed to creating healthy environments for our customers. Central to this effort is providing healthy, nutritious foods. The result of this initiative is an approach that focuses on transparency of ingredients, delicious food, satisfying portions and clarity in message so that you can make Mindful choices!
Mindful offerings meet stringent nutritional criteria based on the Dietary Guidelines for Americans. Each meal part is limited in calories, has fewer than 30% of calories as fat, fewer than 10 % of calories as saturated fat, and is restricted in sodium, and cholesterol. Look for the Mindful icon to indulge in the healthy and delicious items offered at each meal.
My Zone is our campus “pantry” where food items needed by students with Celiac disease or nut allergies are stored and prepared with precautions against cross-contact. This area is free of tree nut, peanut and gluten-containing ingredients and products.
Simple Servings is our allergen-safe, dining option for our customers with food allergies or gluten intolerance. This station offers food free from peanuts, tree nuts, shellfish, wheat, soy, milk products, eggs, and gluten-containing ingredients. Simple Servings staff members are carefully trained to avoid cross-contact with food allergens.
A variety of gluten-free items across campus and can accommodate customers with foods that are free from gluten-containing ingredients and protected against cross-contact with gluten.
Menu items with the vegetarian icon contain no meat, fish or poultry, or any meat products such as soup base. Our vegetarian offerings meet the needs of lacto-ovo vegetarians and may include eggs and/or dairy products.
Vegan offerings contain no meat, fish, eggs, milk or other animal-derived products such as honey.
